Almond Butter Granola Bars

I love having a good, prepped, homemade snack ready to go in the fridge or freezer for busy days or when I just need a little something extra. These homemade almond butter granola bars are perfect for just that! They have less sugar and junky ingredients than store bought granola bars, and are packed with the nutritious flavours of our almond butter! The best part, it’s easily adaptable so you can add or sub certain ingredients that you prefer better (see optional add ins).

I like to use Lucuma Turmeric is this particular recipe, but as with many of our other recipes, any flavour you prefer would work just fine!

Total time: 30 minutes

What you need….

-1 cup packed dates (pitted)

-1/4 cup maple syrup (or honey)

-1/4 cup Lucuma Turmeric almond butter (or flavour of choice!)

-1/2 cup walnuts or pecans

-1/4 sunflower seeds (or pumpkin seeds)

-1 1/2 cups rolled oats

-1/4 cup dairy free dark chocolate chips

Optional add ins..

-Pinch of cinnamon

-1 tsp vanilla extract

-Pinch of ginger powder

-Sub half the amount of chocolate chips for dried fruit such as cranberries or raisins

What to do…

-Soak dates in hot water for about 15-20 minutes… then pat dry with a towel or paper towel.

-Add dates to a food processor and pulse until they are chopped into small pieces.

-Transfer to a large mixing bowl. Add nuts to the food processor and pulse until they are roughly chopped.

-Add nuts, oats, sunflower seeds to dates and mix until everything is disperse evenly.

-Add maple syrup and almond butter to a small sauce pan and heat slightly on medium heat (about 1-2 minutes) until they have a thinner consistency and are mixed together.

-Add the maple syrup and almond butter mixture to the dry ingredients and stir until evenly incorporated.

-Line a loaf pan with parchment paper and add the mixture. Add another piece of parchment paper on top and press down with your hands until the mixture is packed down and is even throughout the pan.

-Leave covered and put the pan in the freezer for about 15 minutes. After the mixture has set in the pan, it can be removed from the pan and cut into desired size bars or squares!

-Keep them in the fridge or in the freezer to keep longer, and ENJOY! <3
